Sarah Todd’s Christmas Pavlova Recipe

To celebrate the festive season and this historic prize, we invited the wonderful Sarah Todd to visit the home and create some inspiring recipes to really put the property’s dream kitchen and stunning entertaining areas through their paces. And what Christmas menu would be complete without a Pavlova?

Check out Sarah’s take on this iconic Aussie dessert below!

Instructions:

  1. Make the French Meringue:
    • Preheat the oven to 100°C (212°F). Line a baking tray with baking paper.
    • Beat the egg whites in a clean bowl until they form soft peaks.
    • Gradually add the sugar while continuing to beat until the meringue is glossy and forms stiff peaks.
    • Fold in the lemon juice, cornstarch, and vanilla extract.
    • Pipe the meringue onto the baking paper, creating a decorative shell or swirl.
    • Bake the meringue in the oven for about 1 hour, until the meringue is crisp but not browned.
  2. Prepare the Mango Coulis:
    • In a saucepan, combine the chopped mango, sugar, lime juice, and vanilla bean.
    • Cook over medium heat until the mango is soft and the mixture starts to thicken, about 10-15 minutes.
    • Remove from heat and strain the coulis through a fine sieve to remove any pulp for a silky-smooth finish.
    • Allow to cool completely.
  3. Make the Vanilla Mascarpone Cream:
    • In a mixing bowl, whisk together the mascarpone, heavy cream, icing sugar, cardamom and vanilla extract until thick and creamy.
    • Transfer to a piping bag fitted with a star or round tip.
  4. Assemble:
    • On the day of serving, place a dollop of vanilla mascarpone cream.
    • Drizzle the mango coulis over the mascarpone cream.
    • Decorate with fresh mango slices, slivered almonds, raspberries, and small sprigs of fresh rosemary.

French Meringue: 

  • 120g egg whites
  • 200g sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch
  • 1/2 teaspoon vanilla extract 

Vanilla Mascarpone Cream:

  • 150g mascarpone
  • 250ml heavy cream (30% fat)
  • 20g icing sugar
  • 1/2 teaspoon vanilla extract
  • 1g cardamom powder 

Mango Coulis: 

  • 2-3 ripe mangos (about 2 cups), peeled and chopped
  • 1 tablespoon sugar
  • 1/2 lime, juiced
  • 1 vanilla bean (or 1 teaspoon vanilla extract) 

For Decoration: 

  • Fresh Mango (optional)
  • Slivered almonds
  • Fresh rosemary sprigs
